It is placed in Gioi, a small village with about 1600 people, it is 680 metres above the sea level inside the Cilento and Vallo di Diano National Park
our company was born to be a small homemade factory,
with the purpose to reproduce tastes and flavours of once upon a time.

The processing of the salami happens in a traditional way in the respect of the methods of processing and the recipes handed down within the centuries.
Our products, in fact, have ancient origins as it testifies the quotation
that regards the Soppressata of Gioi,
contained in the compendium “De Agricultura pratica”,
that dates back to 1832, by Columella Onorati, on page 162:

“the Soppressate of Noia are good but those of Gioi are the best in the Cilento, in the Principality of Citra…”

In the respect of those principles the preservation of the products
makes exclusively through the natural use of preservatives, like salt and spices.

Finally the quality of our salami, is guaranteed to the use of pork bred
by the Biological standard in a natural state.
