It is prepared using the shoulder of pig spiced with “finocchietto” and sweet chilli.
It is sacked in natural gut and matured at least one month.

 

The finocchietto gives to the sausage an intense and pleasant aroma.   The red pepper/paprika gives to the sausage its typical aroma and an intense rosy colour. .
