The
“soppressata “ is a slow food presidio ,
it is a very particular pork sacked, constituted by
a totally lean meat stuffing, for its production is
exclusively used ham,
cleaned of cartilages and nervetti.
The kneading, seasoned with salt and pepper is manually
modelled then it is introduced in a natural gut.
It is prepared in pieces that seasoned, weight about
250 g.
At the end of seasoning the “soppressate”
are preserved
in plastic coverings in which is realized the empty.
The used pigs are bred in a natural way,
with local or national origins.
The
lardello got from a special part of the lard of neck, salted,
secured the softness of the soppressate , it gives taste and
it makes one in its appearance
The
black pepper used to corn, it harmonizes the aroma.
